Green Goddess Salad Dressing

Ingredients
- 2 large egg yolks
- 2 teaspoons apple cider vinegar
- 2 teaspoons fresh lemon juice
- ½ cup jovial Reserve Blend Extra Virgin Olive Oil
- 3 tablespoons Greek yogurt
- 2 tablespoons minced parsley
- 2 tablespoons minced chives
- 1 teaspoon minced tarragon
- 1 clove minced garlic
- ½ teaspoon fine sea salt
Instructions
- Add the yolks, vinegar, and lemon juice to a wide-mouth jar or a glass measuring cup.
- With a hand or immersion blender, begin beating the ingredients, adding 1 tablespoon of olive oil at a time, giving the mixture time to emulsify as you blend.
- When the olive oil has all been added and the mixture is thick, add the yogurt, herbs, garlic, and salt.
- Blend until the dressing becomes a light green color with a pourable consistency.
- Store in the refrigerator for up to 3 days.
