Einkorn with Kale and Red Cabbage

This terrific side dish brings several nutritious foods together into one dish. We’ve combined our einkorn wheat berries with crunchy kale and red cabbage. Not only is it pretty, but the flavors are great and it packs a healthy punch.
Ingredients
- 1 ½ cups jovial Einkorn Wheat Berries
- 4 oz. of lacinato kale
- 2 cups red cabbage
- 1 red onion, thinly sliced
- 15 oz. cannellini beans
- 4 tbsp. jovial Reserve Blend Extra Virgin Olive Oil
- 1 tbsp. lemon juice
- 4 tbsp. parsley, minced
- 6 sprigs of thyme, minced
Instructions
- Cook einkorn according to Basic Cooking Instructions on the package.
- Strip the kale leaves from the stems and chop in thin strips.
- In a large serving bowl, combine kale, shredded cabbage, onion and beans.
- In a small bowl, whisk together olive oil, lemon juice, parsley and thyme with salt to taste.
- Toss the warm einkorn wheat berries with the vegetables and then mix well with dressing.
- Serve with salt and freshly ground black pepper to taste.
