What a wonderful letter! It brought tears to my eyes. I have been experimenting with gluten free since 2008 so I totally understand her comments about working with almond and coconut flours. I have been using energetic testing (also called muscle testing) for quite a few years now and it has consistently shown that einkorn is healthy. Many chiropractors and other holistic practitioners are able to use muscle testing to see what foods/supplements a person is sensitive to. My chiropractor has repeatedly tested my family with einkorn vs regular wheat and einkorn has never tested as a problem but regular wheat has. My chiropractor has started testing his gluten sensitive patients with the einkorn sample I gave him and most have no issue with einkorn. I took the plunge in December and I am now baking my own sourdough breads and my kids love it. My son and I are not eating any modern wheat so I am baking up a storm. I feel better eating einkorn I have noticed that it doesn't stimulate your appetite like other wheats and really satiates you. I LOVE this cookbook and website! It has opened up a whole new world of cooking that I thought was off limits.

This letter hit my right in the "feels", eyes filling with tears. Now that I've found Carla and Einkorn, I know my life won't be one that is "without". Where once I longingly looked at regular bread, I now feel nothing. I make better tasting and better for me bread in my own kitchen. I wish I could have found Einkorn decades ago...perhaps I could have avoided my autoimmune medical mess. Thank you Carla and all your staff! I'm eternally grateful and a fan for life <3
