Wheat Berry & Black Bean Veggie Burgers
Ingredients
- ½ cup jovial Einkorn Wheat Berries
- 1 small white onion
- 3 cloves of garlic
- 1 jalapeño
- 2 jars jovial Black Beans
- 1 tablespoon jovial Extra Virgin Olive Oil, plus more for pan frying burgers
- 4 tablespoons breadcrumbs
- 3 egg yolks
- Salt and pepper to taste
Instructions
- Bring 1 cup of water to a boil. Add the wheat berries and simmer on low for 15-20 minutes, until the water has absorbed.
- While the wheat berries cook, chop the onion, garlic, and jalapeño into small pieces. Heat up 1 tablespoon of olive oil in a pan, then pan-fry the chopped ingredients until the onions are soft and slightly golden. Salt the mixture slightly.
- In the meantime, drain and rinse the beans and put them in a bowl. With an immersion blender, blend them slightly so as to create a thick paste with some whole beans remaining. Once cooked, transfer the onions, garlic, and jalapeños to the same bowl as the beans.
- Add the breadcrumbs (any work, but we recommend using einkorn breadcrumbs), egg yolks, salt, and pepper to the mixture. By this time, the wheatberries should also be done cooking, go ahead and add those as well. Combine all the ingredients with either your hands or a fork, once all the ingredients are evenly incorporated, you are ready to form veggie burgers.
- Shape 6 to 8 veggie burgers using your hands, then pan-fry them with a few tablespoons of olive oil until both sides are darker and have created a nice crust (this should take 3 to 5 minutes per side).
I heard your mom on NPR, and I was sold. And now I can buy it at Wegman’s and Whole Foods.
I hope you, your sister, and dad have a wonderful Christmas.
