Sesame Scallion Ginger Noodles

Ingredients

Yield: 5 servings

  • 1 (12-ounce box) Jovial Capellini
  • 2 tablespoons toasted sesame oil or Jovial Extra Virgin Olive Oil
  • ¼ cup + 2 tablespoons rice vinegar
  • 3 tablespoons maple syrup
  • ½ cup tamari (or ½ cup + 2 tablespoons coconut aminos for a soy free version)
  • 3 tablespoons grated ginger
  • 5 scallions, white and green parts, finely chopped
  • ½ teaspoon chili flakes
  • Optional garnishes: cilantro, broccoli, snap peas, carrots, sesame seeds

Instructions

  1. Cook pasta according to package directions in plenty of salted boiling water. Drain and rinse with cold water. Place in a bowl and toss with toasted sesame oil.
  2. Meanwhile, combine rice vinegar, maple syrup, tamari (or coconut aminos), grated ginger, scallions, and chili flakes in a small bowl. Whisk to combine.
  3. Toss pasta with sauce. Garnish as desired. Store in the refrigerator until ready to enjoy. Serve cold.

Notes: 

  • To grate ginger, simply peel the brown skin off with a peeler or a soon, then use a fine cheese grater or microplane to grate the white part.
