Homemade Tomato Soup

Ingredients
- 3 jars of jovial Organic Whole Peeled Tomatoes or 2 cans of bionaturae Organic Whole Peeled Tomatoes
- 2 tbsp. jovial Reserve Blend Extra Virgin Olive Oil
- 2 tbsp. unsalted butter
- 2 medium sweet onions about 2 cups, diced
- 6 cloves garlic, peeled and chopped
- ¼ tsp. crushed red pepper flakes
- 3 cups chicken or vegetable stock
- 2.5 oz. whole basil leaves, washed and stems removed
- Sea salt to taste
- Fresh ground black pepper to taste
Instructions
- Place a 4 quart heavy bottom sauce pot on the stove, set to moderate heat add the olive oil and butter.
- Add the onions, garlic and pepper flakes to butter and cook, stirring occasionally until vegetables are soft and begin to brown, about 10 minutes.
- Separate tomatoes from the juice and crush, reserve the juice.
- Add the chicken stock, tomato juice, tomatoes and basil leaves to the onion mixture.
- Bring to a boil, reduce heat to a simmer and cook soup for 45 minutes.
- Taste and season with salt and pepper.
- For chunky style soup, pass soup through a food mill fitted with the coarsest blade.
- For smoother style soup, puree with a hand blender or in a blender or food processor.
Recipe yields 2 ½ quarts (2.4 liters) of soup
