Greek Wheat Berry Salad Recipe with Einkorn Wheat Berries
⅔ cup (120g) pitted kalamata olives, roughly chopped
1 cup (120g) crumbled feta
Instructions
Cook wheat berries:
In a medium pot, bring 3 cups of water to a boil. Add the wheat berries, stir, and simmer on low for 30-35 minutes, or until tender. Drain away excess water.
For the Dressing:
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, mustard, garlic, oregano, salt and pepper.
In a large bowl, toss the wheat berries with the cucumber, tomatoes, red pepper, onion, olives and feta cheese. Fold in the dressing. Taste and adjust the seasoning, adding additional salt and pepper, as desired.
What a refreshing, healthy wheat berry salad! I topped it with some shredded chicken I had on hand and it was wonderfully tasty. I was wondering if soaking the wheat berries overnight would work and cut down on the cooking time? I find it takes close to an hour for the wheat berries to become tender. Thanks much for the recipe. It is now part of one of my regular dishes. :)
