This simple, grain free recipe boasts all the flavor of a traditional risotto without all the stirring and fuss. The cassava orzo pasta is cooked with... more liquid that you’d typically use and for a few minutes longer. The result is a tender, creamy side dish that complements grilled fish or chicken beautifully. Fold in roasted or grilled veggies for a light lunch.
Cooking Grain-Free Orzo The Right Way
Cassava orzo doesn’t cook exactly the same as regular orzo, so be sure to follow the instructions on the box. Which are:
● Bring 3 quarts of water to a rolling boil. ● Add salt as desired. ● Cook on high heat, stirring frequently. ● Test for doneness and drain. ● Do not overcook.

Melt the butter and olive oil in a large saucepan over medium heat. Add onion, salt, and pepper and cook on low until tender, about 5 minutes. Add garlic and cook for an additional minute.
Add orzo to the pan and stir to coat the pasta with the onion mixture. Add broth and increase the heat to high until the mixture comes to a boil.
Once boiling, lower the heat and simmer, uncovered, until the orzo is tender and most of the liquid is absorbed, about 20 minutes.
Remove from heat. Fold in the cheese, basil, chives, and parsley. Taste and adjust the seasoning as desired.
Hi, On the box, the recipe calls for 3 quarts of water. In this recipe, it calls for 3 cups. And further down the page, it says to cook correctly, follow the instructions on the box: 3 quarts of water. Please! Which is correct?
I cooked your jovial cassava orzo as directed on the box. I would have turned the temp down but it said cook on high heat. I have a pan of thick paste. Wish i had seen this recipe because i would have cooked it in 3 cups instead of 3 quarts and simmered to let it absorb because the billing beat the orzo basically to death. I'll try it once again but it's too expensive to have the directions not be correct on the box
We are sorry to hear you had such a negative experience; we have tested it dozens of times and the secret is abundant water (at least 3 qts) and to test for doneness to your preference. Cassava is very starchy and if there is not enough water, it can become sticky.

How can it be microwaved? And, to be clear, if cooked on the stove the entire 8 0z needs 3 quarts of water? Just checking because of other comments. Thank you.
This recipe is written for cooking on a stove. A microwave will probably not yield a correct texture, but please let us know if you try!
