Einkorn Wheat Berry Taco Bowl
Makes about 4 servings
Ingredients
- 1 ½ cups Jovial Einkorn Wheat Berries (or to make this gluten free, substitute with Gluten Free Orzo!)
- 1 pound ground beef
- ½ pack of taco mix
- 2 tablespoons Jovial Extra Virgin Olive Oil
- ½ onion
- ½ cup + 2 tablespoons Jovial Crushed Tomatoes
- 2 jars Jovial Black Beans
- 1 teaspoon ground cumin
- Salt to taste
- Additional toppings to taste (avocado, salsa, sour cream, cilantro, lime, etc.)
Instructions
- Bring 3 cups of water to a rolling boil; add 1 ½ cups of Einkorn Wheat Berries and simmer on low for 30-35 minutes. Set cooked wheat berries aside.
- In a frying pan, heat 1 tablespoon of olive oil, then add in the chopped onions and fry until golden and fragrant. Add in ground beef and cook for a few minutes. Add taco mix and a pinch of salt, cook for another minute, then add a ½ cup of tomatoes. Stir and cook for another 5-10 minutes, or until liquid has reduced and the meat is fully cooked.
- While the meat is cooking drain the black beans. Heat 1 tablespoon of olive oil in a sauce pan, then add the cumin and 2 tablespoons of tomatoes along with salt to taste. Cook for a few minutes on low heat, then add in the drained beans and cook for about 5 minutes, stirring frequently.
- Once all components are cooked, assemble your bowl by placing about ⅔ cup (or more) of wheat berries at the bottom of a shallow bowl or pasta dish. Then, top with beef, beans, and any other toppings you like. Some of our favorites are salsa, avocado, sour cream, fresh lime, and cilantro.
