Einkorn Apple Crumble

Ingredients

Apple filling:

  • 1 pound of peeled and sliced granny smith apples
  • ½ cup sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons Jovial All-Purpose Einkorn Flour
  • ¼ teaspoon cinnamon powder
  • 1⁄8 teaspoon cardamom powder

Crumble topping:

Instructions

  1. Preheat the oven to 375°F.
  2. In a large flat pan, dry toast the wheatberries on medium heat or until many have popped and they have browned slightly. This should only take a few minutes. (This step can be skipped if extra crunch is not your preference.)
  3. Place the sliced apples into a large mixing bowl along with the sugar, lemon juice, flour, and spices. Mix with your hands, making sure all apples are coated in the mixture. Cover the bowl and set aside.
  4. In another mixing bowl, combine all dry ingredients for the crumble, if you are including the wheatberries, make sure they have fully cooled before adding them in.
  5. Give the dry ingredients a quick mix, then add in the cubed butter. Working with your fingertips, blend in the small cubes of butter until no dry spots remain; some of the butter will be fully incorporated while some will be in pea-sized clumps. (If you the crumble topping is your favorite part, you can try adding another half of the crumble topping recipe.)
  6. Spread out the apple mixture evenly in an 11x7-inch baking dish, then evenly coat with the crumble topping.
  7. Bake for 50 to 60 minutes, or until the top has become golden brown. Enjoy warm, served with some cold ice cream, or just on its own!
