Wouldn’t it be a pleasure to enjoy truly authentic egg pasta? These tagliatelle are also gluten free and made with 100% organic brown rice flour and organic eggs from our very own pasture-raised hens. These noodles are so skillfully crafted by our artisans in Lucca, they taste better than homemade.

We have been working on our gluten free cookie recipes a lot this year. Our goal has been to remove all soy ingredients because some of you are sensitive. We have finally got things perfect and come September, we will be baking a fresh batch that includes 100% organic whole grain buckwheat flour and a hint of organic chickpea flour instead of soy and features a softer outer chocolate cookie. You’re going to love these cookies even more.
Fair Trade certification is on its way to our einkorn cookies! We will be using certified cocoa, cane sugar, cinnamon and ginger in our next batch and the new pack will carry the Fair Trade logo so you know your purchase is supporting a great cause. As you know, we work directly with our own small farmers in Italy for our einkorn and eggs. Now you can feel ever better about your favorite cookies knowing that all of the farmers that provide us with ingredients are getting paid fair prices for their crops.
It has been hot in our kitchen this summer because we have been doing a lot of baking! Coming this month, great new bread recipes using our einkorn flour and ground wheat berries that have been tested over and over again so they will come out perfect at your home. Having the pleasure of eating freshly baked einkorn bread means never going back to the other stuff, doesn’t it?
Did you know that one of the most delicious ways to eat wheat berries is in a simple salad? New and easy recipes with this protein-packed ancient grain are on their way this month. Here is something really delicious- cook 1 1/2 cups of wheat berries in 3 cups of water and let stand to cool. Prepare a traditional caprese salad with fresh garden tomatoes, fresh mozzarella with good quality extra virgin olive oil and then toss with the cooked einkorn wheat berries. Yum.
Our organic tomatoes are ripening at the farm right now and will be packed in late August. We are going to take you along soon to show you how we make this great new product. Packed in BPA-free glass and free of gluten and other allergens, they will be hitting retail stores with nationwide roll-out in September. Request them at your local store.
More Jovial Culinary Getaways in Lucca will be announced shortly. We had so much fun meeting Carole, Liz, Shauna and family that we are making this dream a yearly reality from now on. Mark your calendar for these dates- May 18-June 1. We would love to meet you there.
