Learn More About Jovial Gluten Free Farfalle
Have you tried our new gluten free brown rice farfalle (Italian for butterflies)? This product is one of my absolute favorites, but it almost never came to be.
Last year in May, I met with our pasta artisans to discuss new varieties. Farfalle was number one on my list because I wanted a special shape for our gluten free community.
I’ve always been fascinated by the machinery that makes farfalle. The pasta dough is laminated to a flat sheet, just like when we make lasagne, then it rolls into the machine and is cut into long strips. The strips are cut into small squares with ruffled edges, then the center of each square is pinched together. This all happens in a split second.
We had rigged up an old machine that was no longer in use to start production. I was disappointed with the first trial run because the center seemed too tough to me, so I wanted to opt out on this new item. However, the pasta artisans promised they would work at making the product better when they started the real production.
I was in for a pleasant surprise when I tasted the first batch. These guys are talented, and the first bowl of farfalle was as delicious as they promised. This pasta soon became my family favorite!
We knew the temporary machine was not going to be able to handle the demand, so in October, a new machine was ordered and installed. I was at the factory for the first production. I was tense because I was afraid the new machine might change something and the pasta would not be as good as what we had made thus far.
Thankfully, we were all smiles at the Quality Control lab after we cooked up the first batch made with the new machine because the texture was even better than the original production. There is nothing that makes us happier than knowing we’ve overcome a few hurdles and come up with a delicious new gluten free product.
