There is often so little time to get dinner on the table, and that’s when a healthy side like this Borlotti Bean Salad can make the perfect meal. This is one of our absolute favorite Italian bean salads, made delicious with jovial’s new Borlotti Beans and Reserve Blend Extra Virgin Olive Oil. Borlotti beans are an heirloom cranberry bean that taste similar to the pinto, but are larger and have a softer skin. They are the signature bean of the Piemonte region of Northern Italy, but are loved by Italians the world over.

At our culinary getaways in Lucca, we make it a point to prepare a buffet of Italian-style salads at the start of each meal. This bean salad is often on our menu, along with the freshest seasonal vegetables like thinly sliced fennel or cabbage, simply dressed with olive oil and salt. We’ll have steamed green beans with Carla’s neighbor’s aged balsamic vinegar or a green salad with buttermilk, lemon, and fresh herb dressing. We’re always surprised to learn that simple salads like this one are often a favorite memory for our guests.

Borlotti Bean Salad

Serves 4

Ingredients

  • 1 tablespoon jovial Reserve Blend Extra Virgin Olive Oil
  • 2 teaspoons balsamic vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon dried oregano
  •  One jar of jovial Borlotti Beans, drained and rinsed
  • 1 medium tomato, finely chopped
  • ½ of a medium red onion, thinly sliced
  • 1 tablespoon fresh parsley, minced

Instructions

  1. In a medium bowl whisk together oil, vinegar, salt, and oregano.
  2. Add the beans, tomatoes, onions, and parsley to the bowl and mix well.
  3. Serve immediately.

    I have made this delicious salad twice now. It is so good that I doubled the recipe the second time. I think it is an especially nice summer dish. It is quick and easy. Can’t beat that!
