Gluten Free Cookies- how we fill them

So, how do our new gluten free cookies differ from the good ole oreo-style sandwich cookie and how do we get the filling inside? The sandwich cookie is just that- a sandwich of two cookies with a center that is actually icing that is not baked.  Our new gluten free cookies are different because the filling is enclosed inside the cookie before going in the oven. Here’s how…

The dough is mixed in small batches, enough for about 300 boxes of cookies. The outer dough is denser than the filling and is piped at the same time as the center, with the cream or fruit filling piped on top of the dough. A spatula-like tool brushes over the dough to swirl it around the filling. This perfect little pouch of dough is gently flattened by a roller. It rises back up while baking (350 degrees for 12 minutes, just like home). Perfect for a tea party with friends, and they will never notice they are gluten free!
